A special highlight in this section is the work of Professor Johanna Mendelson Forman—the creator of Conflict Cuisine: An Introduction to War and Peace Around the Dinner Table. As an Adjunct Professor at American University’s School of International Service and Distinguished Fellow at the Stimson Center, she has developed conflict cuisine into its own interdisciplinary field, studying how food functions as a tool for soft power, peacebuilding, and social gastronomy in post‑conflict contexts such as Haiti, Rwanda, and Venezuela.
